Ingredients

Directions

  1. Fry the 4 slices of bacon in a skillet over medium heat until crisp, then drain on paper towels and crumble.
  2. Cut the tops off the 6 tomatoes, core them, and carefully scoop out the insides to create hollow cups.
  3. Finely chop the scooped-out tomato centers.
  4. Sprinkle the inside of the hollowed tomato shells with 1/2 teaspoon of salt.
  5. Place the tomatoes upside down on paper towels to drain excess juice, then refrigerate to chill.
  6. In a mixing bowl, combine the chopped tomato centers, finely chopped onion, diced green chiles, lemon juice, wax pepper juice, and remaining salt.
  7. Mix well and refrigerate the mixture until ready to serve.
  8. Just before serving, mash the avocados into the tomato mixture to create a guacamole-like filling.
  9. Arrange a bed of lettuce on serving plates and place the chilled tomato shells on top.
  10. Fill each tomato shell with the avocado-tomato mixture.
  11. Top each stuffed tomato with the crumbled bacon and serve immediately.
