Directions
-
Prepare the date filling by placing chopped dates and bicarbonate of soda in a bowl. Pour over boiling water, cover, and let stand for 5 minutes. Mash with a fork until smooth.
-
In a separate bowl, sift self-raising flour into a large bowl. Rub in butter until the mixture resembles coarse crumbs.
-
Make a well in the center of the flour mixture. Add the date mixture and lightly whisked egg. Using a round-bladed knife in a cutting action, mix to form a soft dough.
-
To make the syrup, place water, caster sugar, and golden syrup in a large saucepan. Cook and stir over low heat for 5 minutes or until sugar dissolves.
-
Increase heat to moderate and bring the syrup to the boil.
-
To make the dumplings, carefully drop heaped tablespoon measures of dough into the boiling syrup in the pan.
-
Cover with a tight-fitting lid. Reduce heat and simmer for 20 minutes or until a skewer inserted into the dumplings comes out clean.
-
Serve dumplings warm with the syrup and a scoop of cream or ice-cream.
