  1. Cut the stem off the eggplant.
  2. Using a vegetable peeler, peel lengthwise strips of skin from the eggplant, leaving alternating strips of skin on to create a striped pattern.
  3. Cube the eggplant into 1-inch pieces.
  4. Sprinkle the eggplant cubes generously with salt and set aside for 3 hours to draw out bitterness and moisture.
  5. Rinse the eggplant cubes well under cold water.
  6. Drain the eggplant thoroughly, pressing gently to remove excess water without tearing the cubes.
  7. Soak 2 cups of long-grain rice in hot water mixed with 2 teaspoons of salt until the water cools down.
  8. Drain the rice well and set aside.
  9. Heat 3/4 cup of olive oil in a heavy skillet over medium heat.
  10. Fry the eggplant cubes, stirring frequently, until they are tender and golden brown on all sides.
  11. Remove the eggplant from the pan and drain on paper towels to remove excess oil.
  12. In the same pan, add chopped onions and pine nuts.
  13. Sauté the onions and pine nuts for 15 to 20 minutes until softened and lightly toasted.
  14. Stir in the drained rice and cook, stirring frequently, for 8 to 10 minutes to toast the grains slightly.
  15. Add the fried eggplant, diced tomato, currants, sugar, cinnamon, allspice, and salt and pepper to taste.
  16. Pour in 3 cups of hot water and bring the mixture to a boil.
  17. Cover the pan and cook over medium heat for 5 minutes.
  18. Reduce the heat to low and continue cooking until all the water has been absorbed by the rice.
  19. Stir in the chopped fresh dill.
  20. Ensure the skillet lid seals well; place a clean kitchen towel under the lid to trap steam.
  21. Place the pan on a heat diffuser over the lowest possible heat and let it sit for 30 minutes to steam.
  22. Fluff the pilaf with a fork.
  23. Serve cold or at room temperature.
