Directions
-
Cut the stem off the eggplant.
-
Using a vegetable peeler, peel lengthwise strips of skin from the eggplant, leaving alternating strips of skin on to create a striped pattern.
-
Cube the eggplant into 1-inch pieces.
-
Sprinkle the eggplant cubes generously with salt and set aside for 3 hours to draw out bitterness and moisture.
-
Rinse the eggplant cubes well under cold water.
-
Drain the eggplant thoroughly, pressing gently to remove excess water without tearing the cubes.
-
Soak 2 cups of long-grain rice in hot water mixed with 2 teaspoons of salt until the water cools down.
-
Drain the rice well and set aside.
-
Heat 3/4 cup of olive oil in a heavy skillet over medium heat.
-
Fry the eggplant cubes, stirring frequently, until they are tender and golden brown on all sides.
-
Remove the eggplant from the pan and drain on paper towels to remove excess oil.
-
In the same pan, add chopped onions and pine nuts.
-
Sauté the onions and pine nuts for 15 to 20 minutes until softened and lightly toasted.
-
Stir in the drained rice and cook, stirring frequently, for 8 to 10 minutes to toast the grains slightly.
-
Add the fried eggplant, diced tomato, currants, sugar, cinnamon, allspice, and salt and pepper to taste.
-
Pour in 3 cups of hot water and bring the mixture to a boil.
-
Cover the pan and cook over medium heat for 5 minutes.
-
Reduce the heat to low and continue cooking until all the water has been absorbed by the rice.
-
Stir in the chopped fresh dill.
-
Ensure the skillet lid seals well; place a clean kitchen towel under the lid to trap steam.
-
Place the pan on a heat diffuser over the lowest possible heat and let it sit for 30 minutes to steam.
-
Fluff the pilaf with a fork.
-
Serve cold or at room temperature.
