Description

This classic English Toffee is the ultimate holiday treat, combining a crisp, buttery sugar base with a smooth layer of semi-sweet chocolate and crunchy toasted almonds. The recipe creates a delightful contrast in textures: the hard, snap of the toffee gives way to the creamy melt of the chocolate topping. Rich with butter and sweetened with sugar and corn syrup to prevent crystallization, this dessert is pure indulgence. It is perfect for Christmas cookie exchanges, holiday parties, or simply enjoying with a cup of tea. Easy to make in a single skillet, it yields generous bars that store well, making them ideal for gifting or snacking throughout the festive season.

Ingredients

Directions

  1. Preheat oven to 350&# 194;°F (175ðC) and line a 17x14-inch baking sheet with parchment paper or grease thoroughly.
  2. In a heavy 10-inch skillet, melt the butter over medium heat.
  3. Stir in the sugar, light corn syrup, water, and 1 cup of slivered almonds until the sugar begins to dissolve.
  4. Cook the mixture, stirring constantly, until it comes to a boil.
  5. Attach a candy thermometer and continue cooking, stirring occasionally, until the mixture reaches 290ðF (143ðC) (soft crack stage). Do not exceed this temperature.
  6. Immediately pour the hot toffee mixture onto the prepared baking sheet. Spread it evenly to the edges.
  7. While the toffee is still warm but cooling, use a sharp knife to score it into small bars.
  8. In a heatproof bowl set over a saucepan of simmering water (double boiler), melt the chocolate chips and vegetable shortening, stirring until smooth.
  9. Spread the melted chocolate evenly over the cooled toffee base.
  10. Sprinkle the toasted sliced almonds evenly over the chocolate layer.
  11. Allow the toffee to cool completely at room temperature until the chocolate is set.
  12. Break the toffee along the scored lines and store in an airtight container in a cool place.
