Ingredients

Directions

  1. Place the 4 sirloin steaks between sheets of waxed paper and pound them until they are approximately 1/3 inch thick.
  2. Season both sides of the steaks with salt and freshly ground black pepper.
  3. In a small saucepan, melt 2 tablespoons of butter over medium heat.
  4. Add the 4 finely chopped shallots to the melted butter and cook until they are lightly browned and softened.
  5. Stir in the 2 tablespoons of Worcestershire sauce and heat the mixture until it begins to bubble. Keep the sauce warm.
  6. Meanwhile, in a large 12-inch skillet or chafing dish, melt the remaining butter over high heat.
  7. Once the butter foams and begins to brown slightly, add the steaks to the skillet.
  8. Cook the steaks for about 3 minutes on the first side.
  9. Flip the steaks and cook for another 2 to 3 minutes, or until cooked to your desired doneness.
  10. Transfer the cooked steaks to a warm serving platter.
  11. Spoon the hot shallot and Worcestershire sauce generously over the steaks.
  12. Garnish with freshly chopped parsley and serve immediately.
