Description

This Fesh Lemon Ice is a refreshing, vintage-style frozen dessert that captures the bright zest of fresh lemons in a light, airy texture. Unlike heavy ice creams, this treat relies on a simple sugar syrup infused with lemon peel and juice, set with a touch of gelatin for a smooth mouthfeel. The key to its unique consistency is the folding in of stiffly beaten egg whites, which aerates the mixture and prevents it from freezing into a solid block of ice. It serves as a perfect palate cleanser or a light summer dessert, offering a sweet-and-tart balance that is both sophisticated and nostalgic. Ideal for warm afternoons or as a refreshing finale to a rich meal, this lemon ice brings a burst of citrus flavor to your table without the heaviness of dairy.

Ingredients

Directions

  1. Sprinkle the unflavored gelatin over 1/4 cup of the water in a small bowl and let it soften for 5 minutes.
  2. In a small saucepan, combine 1/2 cup of the sugar and the remaining 1 1/2 cups of water.
  3. Bring the sugar-water mixture to a boil over medium heat, stirring until the sugar dissolves.
  4. Cook the syrup for 2 minutes, then remove from heat.
  5. Stir the softened gelatin mixture into the hot syrup until completely dissolved.
  6. Stir in the lemon peel and lemon juice.
  7. Pour the lemon mixture into an 8-inch square pan or a shallow freezer-safe container.
  8. Place in the freezer for about 1 1/2 hours, stirring every 15 minutes until the mixture becomes a slushy consistency.
  9. Meanwhile, in a clean bowl, beat the 2 egg whites until they become foamy.
  10. Gradually add the remaining 1/4 cup of sugar to the egg whites, beating continuously until soft peaks form.
  11. Gently fold the beaten egg whites into the semi-frozen lemon slush to aerate the mixture.
  12. Return the pan to the freezer.
  13. Freeze until firm, stirring occasionally to prevent large ice crystals, for about another 4 hours.
