Description

This classic French-inspired dish features delicate sole fillets poached gently in white wine, then bathed in a rich, velvety sauce made with butter, cream, and sweet seedless green grapes. The combination of the mild, flaky fish and the tart-sweet grape reduction creates a sophisticated flavor profile that is both comforting and refined. It’s an excellent choice for a romantic dinner or a special occasion meal that feels luxurious without being overly complicated. The sauce comes together quickly while the fish rests, ensuring the fillets stay moist and tender. Serve immediately with steamed vegetables or crusty bread to soak up the delicious sauce.

Directions

  1. Heat a 10-inch skillet over medium heat. Add the finely chopped shallots and sauté briefly until fragrant, about 1 minute.
  2. Season the sole fillets with salt and pepper. If using large fillets, fold them in half to fit the skillet.
  3. Arrange the fillets in the skillet. Pour in the dry white wine, lemon juice, and the liquid from the can of grapes.
  4. Bring the liquid to a boil, then reduce heat to low. Cover the skillet and simmer gently until the fish is opaque and flakes easily with a fork, about 4 to 5 minutes.
  5. Carefully remove the fish fillets with a slotted spatula and transfer them to an ovenproof platter. Keep warm in a low oven or covered with foil.
  6. Drain the grapes, reserving the liquid in the skillet. Bring the reserved liquid to a boil and reduce heat to simmer uncovered for 3 minutes to concentrate the flavor.
  7. Remove the grapes from the skillet with a slotted spoon and set aside for garnish.
  8. Return the skillet liquid to a boil and simmer until reduced to approximately 1 cup.
  9. In a small saucepan, melt 2 tablespoons of butter over medium heat. Whisk in the flour to create a smooth paste (roux).
  10. Gradually whisk the roux into the reduced grape liquid in the skillet, adding a small amount at a time to prevent lumps.
  11. Cook over low heat, stirring constantly, until the sauce thickens and coats the back of a spoon.
  12. Remove the sauce from heat and stir in the whipping cream.
  13. Return the sauce to low heat and warm through, stirring gently. Do not boil vigorously once cream is added.
  14. Stir in the remaining 2 tablespoons of butter until melted and glossy.
  15. Drain any excess liquid from the platter holding the fish. Spoon the warm sauce over the fillets.
  16. Preheat the oven broiler to high (500°F/260°C) or set to broil.
  17. Place the platter under the broiler for about 3 minutes, just until the sauce is lightly glazed and bubbly.
  18. Garnish with the cooked green grapes and serve immediately.
