Combine the ground chuck, bread crumbs, parsley, egg, water, Parmesan cheese, garlic powder, salt and pepper.

Mix thoroughly and shape into small meatballs.

Bring the chicken broth to a boil.

Add the chopped escarole.

Reduce the heat and simmer gently for 5 to 8 minutes.

Drop the meatballs into the broth a few at a time, stirring gently.

Simmer until the meatballs are cooked through.

Slowly pour the beaten egg and Parmesan mixture into the simmering broth in a thin, steady stream.
