  1. Combine the ground chuck, bread crumbs, parsley, egg, water, Parmesan cheese, garlic powder, salt and pepper.
  2. Mix thoroughly and shape into small meatballs.
  3. Bring the chicken broth to a boil.
  4. Add the chopped escarole.
  5. Reduce the heat and simmer gently for 5 to 8 minutes.
  6. Drop the meatballs into the broth a few at a time, stirring gently.
  7. Simmer until the meatballs are cooked through.
  8. Slowly pour the beaten egg and Parmesan mixture into the simmering broth in a thin, steady stream.
  9. Stir gently and simmer for 1 minute.
  10. Turn off the heat and allow the soup to settle for 10 to 15 minutes before serving.
