Description

These Flaky Mushroom Swirls are a delightful Italian-inspired appetizer that balances the earthy richness of sauted white mushrooms with the delicate crunch of all-butter puff pastry. The filling is enhanced with sweet frozen onions, aromatic chervil, and sharp Parmesan cheese, creating a complex flavor profile that is both comforting and elegant. Perfect for holiday gatherings, dinner parties, or as a sophisticated starter before a main course, these swirls are easy to prepare and can be made ahead of time. The result is a golden, flaky bite that holds together beautifully while offering a warm, savory center. They pair wonderfully with a glass of white wine or a light broth.

Ingredients

Directions

  1. Preheat oven to 375F (191C) and line a cookie sheet with baking parchment.
  2. In a large heavy skillet, heat 2 tablespoons of oil over medium-high heat until hot but not smoking.
  3. Add the frozen chopped onions and saut until just limp, about 3 to 4 minutes.
  4. Add the remaining 2 tablespoons of oil, then stir in the finely chopped white mushrooms.
  5. Adjust the heat to high and cook the mushrooms until the moisture has almost completely evaporated, about 7 minutes, stirring often.
  6. Remove the pan from the heat and stir in the grated Parmesan cheese, crumbled chervil, salt, and freshly ground black pepper.
  7. Set the mushroom filling aside to cool slightly.
  8. Lightly flour a clean workspace and unfold the defrosted puff pastry, dusting it lightly with flour.
  9. Using a floured rolling pin, roll the pastry into a rectangle approximately 12 by 18 inches.
  10. Cut the rectangle into 2 long rectangles, each measuring 6 by 18 inches.
  11. Brush off excess flour and spread half of the mushroom mixture over each rectangle, leaving a 1-inch border at the top edge.
  12. Starting with the bottom long edge, roll up each rectangle jelly-roll fashion, gently pressing the top edge to seal the pastry.
  13. Wrap the rolls tightly in plastic wrap or foil and flatten slightly by pushing gently on the sides to form oval-shaped spirals.
  14. Refrigerate the rolls until the pastry is firm, at least 2 hours.
  15. Remove the rolls from the refrigerator and, using a sharp knife, cut them crosswise into 3/8-inch slices.
  16. Place each slice onto the prepared parchment-lined baking sheet, leaving 1 1/2 inches of space between them.
  17. Bake in the middle of the oven until the tops are lightly browned.
  18. Using a spatula, carefully turn the spirals over and continue baking until the second side is lightly browned and the centers are cooked through.
  19. If using multiple pans, rotate them during baking for even browning.
  20. Remove from the oven and slide the swirls onto a wire rack to cool slightly.
  21. Serve warm.
