Flournoy Red Beans & Rice
Description
This authentic Cajun-style red beans and rice is a hearty, soul-warming dish that captures the essence of Southern comfort food. The deep, smoky flavor comes from slow-simmering dried red beans with a meaty ham bone and spicy smoked sausage. Aromatic vegetables like onions, bell peppers, and celery form the base of this robust stew, enhanced by fresh garlic, thyme, and a touch of ketchup for color and depth. The result is a creamy, flavorful bean mixture that clings perfectly to fluffy white rice.Ingredients
Directions
-
Soak dried red beans in water to cover overnight.
-
Drain and rinse the soaked beans thoroughly.

-
Add enough water to cover the ingredients.
-
Bring the mixture to a boil, then lower heat, partially cover, and simmer for 2 hours, stirring occasionally.
-
Meanwhile, steam the smoked sausage in a skillet, drain, and then pan-fry until browned.
-
Add the cooked sausage to the pot of beans.
-
Just before serving, remove the ham bone and bay leaf.
-
Stir in a little more fresh parsley.
-
For added thickness, remove a cup of beans from the pot, mash thoroughly, and return to the pot.
-
Serve the beans over fluffy boiled rice, garnished with chopped scallions.
