Four-Onion” Soup With Garlic Croutons
Description
This comforting Four-Onion Soup draws inspiration from Vietnamese home cooking, blending onions, leeks, and shallots into a smooth, aromatic broth. The recipe highlights the natural sweetness and depth of the alliums, simmered slowly until tender before being pureed for a luxurious texture. It is a simple, vegan-friendly dish that offers a warm, savory flavor profile without being overly heavy. Perfect for chilly evenings or as a light starter, it pairs beautifully with the included garlic-rubbed croutons for a satisfying crunch. The addition of fresh chives at the end provides a bright, herbal finish that cuts through the richness of the soup. Easy to prepare with pantry staples, this recipe delivers restaurant-quality comfort in a bowl.Ingredients
Directions
-
Peel the onions and cut them in half lengthwise, then slice them very thinly lengthwise.
-
Cut the leeks in half lengthwise, wash them thoroughly to remove dirt, and slice into 1/4-inch crosswise pieces.
-
Peel the shallots and slice them thinly.
-
Place the onions, shallots, and leeks in a heavy pot with 1 cup of water or vegetable stock.
-
Cook over medium heat, stirring occasionally, until the water has evaporated and the vegetables begin to soften without browning.
-
Add the remaining 6 cups of water or vegetable stock, along with salt and white pepper to taste.
-
Simmer the soup for 30 minutes until the vegetables are very tender.
-
Remove 2 cups of the liquid and vegetables from the pot and transfer to a blender or food processor.
-
Puree until smooth and return the mixture to the pot with the remaining soup.
-
Cut the garlic clove in half and rub the cut side over the slices of sourdough bread.
-
Toast the garlic-rubbed bread slices in the oven or a toaster until golden and crisp to make croutons.
-
Ladle the hot soup into 6 bowls.
-
Garnish each bowl with the garlic croutons and snipped chives.
