Ingredients

Directions

  1. Preheat the oven to 350 degrees F (175 degrees C).
  2. In a large bowl, mash the baked beans with a fork or potato masher until smooth.
  3. To the mashed beans, add the ground beef, crumbled bread, eggs, BBQ sauce, mustard, and ketchup.
  4. Mix all ingredients together thoroughly with your hands or a spoon until well combined.
  5. If the mixture seems too dry, add a splash of milk or water; if too wet, add a bit more crumbled bread to reach a firm consistency.
  6. Divide the meat mixture in half and press each half into the bottom and up the sides of two 9x5 inch loaf pans, leaving a large hollow trough in the center of each.
  7. Reserve approximately 1.5 cups of the meat mixture to use later.
  8. Fill the troughs in the center of each meatloaf with the mashed potatoes, spreading them evenly.
  9. Cut or grate the cheese and sprinkle it evenly over the mashed potatoes in the troughs.
  10. Cover the potatoes and cheese with the reserved meat mixture, smoothing the top to seal the filling inside.
  11. Bake for 1 hour, or until the meatloaf is cooked through and reaches an internal temperature of 160 degrees F (71 degrees C).
