  1. Hard Salami, thinly sliced -
  2. cut into thin strips or 1 1/3 c Olive Oil -jar whole 3 Cloves Garlic, sliced Pimento, drained and
  3. cut 1 md Onion, coarsely chopped -into strips 1/4 ts Saffron, crushed Bay Leaf 4 c Chicken Broth Salt/Freshly ground Pepper 1 md Tomato, peeled, seeded and
  4. Preheat oven to 350 degrees F (177&# 194;°C).
  5. Cut four franks into quarters lengthwise.
  6. Slice remaining granks into 3 pieces.
  7. Heat 2 T oil in large skillet,
  8. add frank strips and pieces and
  9. cook until lightly browned - strips will curl;
  10. remove and
  11. set aside.
  12. Add 1 T oil and cocktail franks and salami slices.
  13. Lightly brown; remove and set aside.
  14. Add remaining oil, garlic, onion to skillet and cook, stirring for 3 minutes.
  15. Add rice and saffron, cook and stir until rice turns golden.
  16. Add chicken broth and bay leaf.
  17. Bring to a boil, cover, and simmer 20 minutes.
  18. Salt and pepper to taste.
  19. In a shallow 4 quart oven proof casserole,
  20. arrange rice, sausages, tomato, and bell peppers so that some of each show on top.
  21. Heat in oven 15 to 20 minutes.
