Description

These Fresh Fig Bars offer a rustic, homemade treat that balances the earthy sweetness of figs with a buttery, oatmeal crust. The filling is cooked down until dark and jammy, creating a rich contrast to the crisp-tender topping. Perfect for afternoon tea or as a portable snack, these bars are easy to assemble and bake. They capture the essence of autumn baking, using simple pantry staples like honey, brown sugar, and quick-cooking oats. Serve them warm for a gooey texture or cool them for a firmer bite.

Ingredients

Directions

  1. In a saucepan, combine chopped figs, 2 tablespoons water, honey, 1/4 teaspoon salt, and lemon peel.
  2. Simmer the fig mixture over low heat for 1 to 1-1/2 hours, stirring occasionally, until dark and thickened.
  3. Combine 2 tablespoons flour with 1 cup water and stir into the fig mixture.
  4. Cook for 5 minutes longer, stirring constantly, until the filling is thick.
  5. Remove from heat and stir in lemon juice and walnuts if using. Set aside.
  6. In a large bowl, cream shortening with brown sugar until light and fluffy.
  7. Combine sifted flour, 1/2 teaspoon salt, and oatmeal, then stir into the creamed mixture.
  8. Grease a 9 x 13 inch baking pan.
  9. Pat half of the oatmeal mixture into the bottom of the prepared pan.
  10. Spread the fig filling evenly over the oatmeal crust.
  11. Sprinkle the remaining half of the oatmeal mixture on top and press down gently with a fork.
  12. Bake at 350 degrees F (177C) for 25 to 30 minutes, or until lightly browned around the edges.
  13. Cut into squares while still warm.
  14. Cool completely before removing from the pan.

Note

Storage: Store bars in an airtight container at room temperature for up to 3 days or in the refrigerator for up to 5 days.

Substitutions: You can substitute butter for the shortening. Dried figs may be used instead of fresh, but you may need to adjust the cooking time and add a bit more water to plump them up.

Tip: For a crispier top, you can sprinkle a little extra brown sugar over the top crust before baking.
