Fresh Fig Bars
Description
These Fresh Fig Bars offer a rustic, homemade charm with a soft, chewy oatmeal crust and a luscious, jam-like fig filling. The filling is simmered slowly to concentrate the natural sweetness of the figs, balanced by bright lemon juice and crunchy walnuts. Perfect for afternoon tea, potlucks, or as a comforting dessert, these bars capture the essence of autumn in every bite. The combination of warm spices from the oats and the deep, fruity flavor of the figs creates a satisfying treat that is both indulgent and wholesome.Directions
-
Preheat oven to 350°F (175°C) and grease a 9x13 inch baking pan.
-
In a saucepan, combine the chopped figs, water, honey, salt for filling, and grated lemon peel.
-
Bring the fig mixture to a simmer over medium heat, then reduce heat to low.
-
Simmer for 1 to 1.5 hours, stirring occasionally, until the mixture is dark and thickened.
-
In a small bowl, mix the flour with water for thickening to form a slurry.
-
Stir the flour slurry into the simmering fig mixture.
-
Cook for 5 more minutes, stirring constantly, until the filling thickens further.
-
Remove the filling from heat and stir in the lemon juice and walnuts. Set aside.
-
In a large bowl, cream the shortening and brown sugar together until light and fluffy.
-
In a separate bowl, combine the sifted flour, salt for crust, and quick-cooking oatmeal.
-
Stir the dry ingredients into the creamed shortening mixture until just combined.
-
Press half of the oatmeal mixture evenly into the bottom of the prepared 9x13 inch pan.
-
Spread the fig filling evenly over the oatmeal crust.
-
Sprinkle the remaining oatmeal mixture over the filling and press gently with a fork.
-
Bake for 25 to 30 minutes, or until the top is lightly browned around the edges.
-
Cut into squares while still warm, then allow to cool completely in the pan before removing.
