Cook yams until tender Drain and slice. Place slices in casserole dish Blenderize orange juice, dates and cornstarch until smooth Cook in small saucepan over medium heat until mixture thickens, stirring constantly. Remove from heat. Stir in orange peel Pour sauce over yams in casserole dish. Cover with foil Bake at 400 for 45 minutes Remove foil and continue baking basting frequently with sauce, about 15 more minutes Garnish with orange slices and sprigs of mint.
