Fried Chicken BBQ Sauce
Description
This unique BBQ sauce combines ketchup, vinegar, and sugars with a complex blend of spices and fresh citrus. It is designed to be simmered for hours to achieve a thick, gooey consistency that is thinner than traditional BBQ sauces. Perfect for dipping fried chicken, ribs, or pork loins, this sauce delivers a hot, savory, and sweet flavor profile.Ingredients
Directions
-
Combine all Part I ingredients (tomatoes, ketchup, Worcestershire sauce, lemon, orange, grape jelly, mustard, and all spices) in a large pot.
-
Simmer the mixture, covered with a splatter screen, for approximately 5 hours until reduced to about half the original volume and thick and gooey.
-
Strain the mixture through a fine mesh sieve or French fry basket to remove the lemon, orange, and larger pieces of diced tomato.
-
Return the strained liquid to the pot and add the Part II ingredients (vinegar, water, sugars, olive oil, margarine, and hot sauce).
-
Bring to a boil, then reduce to a simmer. Continue cooking until the sauce reaches your desired consistency. Note that this is a dipping sauce and should be thinner than regular BBQ sauce.
-
Serve very hot on the side for dipping, or pour generously over ribs, butterfly pork loins, or chicken.
