Description

This unique BBQ sauce combines ketchup, vinegar, and sugars with a complex blend of spices and fresh citrus. It is designed to be simmered for hours to achieve a thick, gooey consistency that is thinner than traditional BBQ sauces. Perfect for dipping fried chicken, ribs, or pork loins, this sauce delivers a hot, savory, and sweet flavor profile.

Ingredients

Directions

  1. Combine all Part I ingredients (tomatoes, ketchup, Worcestershire sauce, lemon, orange, grape jelly, mustard, and all spices) in a large pot.
  2. Simmer the mixture, covered with a splatter screen, for approximately 5 hours until reduced to about half the original volume and thick and gooey.
  3. Strain the mixture through a fine mesh sieve or French fry basket to remove the lemon, orange, and larger pieces of diced tomato.
  4. Return the strained liquid to the pot and add the Part II ingredients (vinegar, water, sugars, olive oil, margarine, and hot sauce).
  5. Bring to a boil, then reduce to a simmer. Continue cooking until the sauce reaches your desired consistency. Note that this is a dipping sauce and should be thinner than regular BBQ sauce.
  6. Serve very hot on the side for dipping, or pour generously over ribs, butterfly pork loins, or chicken.
