Ingredients

Directions

  1. Salt pork may be substituted for the bacon.
  2. Fry bacon slices in 12" skillet until brown and crisp.
  3. Set aside on a warm serving platter.
  4. While meat is frying, peel onions, leaving stems to hold for slicing.
  5. To prevent your eyes from watering, hold a
  6. slice of bread in your teeth while you
  7. slice the onions as thin as possible.
  8. Discard stems.
  9. Core apples and cut crosswise in circles about 1/4" thick.
  10. Apple skins help the slices hold their
  11. shape and
  12. add color to the dish, so don't
  13. peel unless skins are tough or scarred.
  14. Drain all but 1 tb fat from skillet, then add onion slices.
  15. Cook over medium-high heat about 3 minutes.
  16. Cover with apple slices in an even layer.
  17. Sprinkle brown sugar over all, cover skillet, & cook until tender, a few minutes more.
  18. Stir only to prevent scorching.
  19. Remove to warm plate with bacon slices.
  20. This is a "country" dish, seldom mentioned in cookbooks but recalled by many oldtimers.
  21. Some feel sugar is essential; others call it a "sin." If you share Almanzo's enthusiasm you might also like to try fried apples'n'onions with fried potatoes for breakfast sometime.
