Fried Lumpia
Description
These classic Filipino lumpia offer a delightful crunch with every bite, filled with a savory mixture of ground pork, shrimp, mushrooms, and crisp jicama. The filling is seasoned with soy sauce and egg yolks, then tightly wrapped in thin wrappers and deep-fried until golden brown. They are traditionally served with a vibrant, tangy sweet-sour sauce made from vinegar, sugar, ginger, and garlic. This appetizer is perfect for parties, potlucks, or as a starter before a main course.Directions
-
Combine cider vinegar, 1 teaspoon soy sauce, sugar, water (or pineapple juice), ginger, and garlic in a small saucepan.
-
Bring the sauce mixture to a boil over medium heat, stirring occasionally until the sugar dissolves.
-
In a small bowl, mix cornstarch with cold water to create a smooth slurry.
-
Stir the cornstarch slurry into the boiling sauce and simmer for 5 minutes, or until thickened.
-
Season the sauce with salt to taste and keep warm while preparing the lumpia.
-
In a large mixing bowl, combine ground pork, chopped shrimp, minced mushrooms, diced jicama, chopped green onions, egg yolks, and 2 tablespoons soy sauce.
-
Mix the filling ingredients thoroughly until well combined.
-
Place about 1 1/2 tablespoons of the meat mixture into a strip along one side of a lumpia wrapper.
-
Fold the side of the wrapper over the filling, then roll tightly, folding in the ends as you go.
-
Moisten the edge of the wrapper lightly with water to seal the roll.
-
Repeat the rolling process with the remaining filling and wrappers.
-
Heat oil in a deep fryer or large pot to 350°F (175°C).
-
Fry the lumpia in batches until golden brown and crispy, turning occasionally for even cooking.
-
Remove fried lumpia and drain on paper towels.
-
Serve the lumpia whole or cut into halves or thirds, accompanied by the sweet-sour sauce.
