Description

This vibrant Fruit Chili Relish offers a delightful balance of sweet, tart, and savory flavors, making it an exceptional accompaniment to grilled meats, cheese boards, or sandwich spreads. By combining ripe tomatoes with fresh peaches or pears, apples, and onions, this relish achieves a complex texture that is both chunky and smooth. The addition of red bell peppers, cider vinegar, and a blend of pickling spices creates a zesty kick that cuts through richness. Ideal for preserving the bounty of summer harvests, this relish keeps well in jars for months, allowing you to enjoy homemade flavor year-round. It is a versatile vegan condiment that adds a gourmet touch to everyday meals without requiring complicated techniques.

Ingredients

Directions

  1. Prepare the tomatoes by peeling and chopping them if using fresh, or drain canned tomatoes if substituting.
  2. Chop the peaches or pears, apples, medium onions, and red bell peppers (seeded) into uniform small pieces.
  3. In a large, heavy-bottomed pot, combine the tomatoes, chopped fruit, onions, and red bell peppers.
  4. Bring the mixture to a boil over medium-high heat, then reduce heat to maintain a simmer.
  5. Cook uncovered for 1 1/2 hours, stirring occasionally, until the mixture has reduced by half.
  6. Place the mixed pickling spices in a cheesecloth bag and tie it securely.
  7. Add the spice bag, granulated sugar, salt, and cider vinegar to the pot.
  8. Stir well to dissolve the sugar and salt completely.
  9. Continue to cook uncovered for 1 hour, stirring often, until the relish is quite thick and glossy.
  10. Remove the cheesecloth spice bag and discard.
  11. Ladle the hot relish into clean, hot preserve jars, leaving appropriate headspace.
  12. Seal the jars according to the manufacturer's directions for canning or refrigeration.

Note

You can substitute 3 quarts of canned tomatoes for fresh ones. For the fruit component, use either peaches or pears (unpeeled, chopped) and apples (chopped, unpeeled). Approximately 6-7 pieces of each fruit are needed.

This recipe yields approximately 8 pints of relish.

For long-term storage, process sealed jars in a boiling water bath canner according to local guidelines. For short-term use, store in the refrigerator in airtight containers for up to 2 weeks. Ensure jars are hot before filling to prevent breakage and ensure proper sealing.

Stir frequently during the final hour of cooking to prevent sticking and burning, as the sugar content will cause the mixture to caramelize quickly.
