Description

These Fruit Parcels offer a comforting and sophisticated way to serve seasonal produce. By baking apricots, crisp Cox apples, and sweet pineapple together in sealed foil packets, the natural juices create a rich, syrupy glaze that permeates every bite. The result is tender, warm fruit with intensified flavors, perfect for a light evening treat or a healthy dessert option. This recipe is entirely vegan and requires minimal cleanup, making it an excellent choice for spontaneous gatherings or a relaxing meal at home. Serve warm with a dollop of dairy-free yogurt or simply on its own to enjoy the pure taste of summer fruits.

Ingredients

Directions

  1. Preheat the oven to 180&# 194;°C (350ðF / Gas Mark 4).
  2. Peel the pineapple, remove the core, and cut into thick slices, then slice each into three wedges.
  3. Cut the apple in half, remove the core, and cut each half into six wedges.
  4. Halve the apricots and remove the stones.
  5. Place a square of greaseproof paper on top of a 23 cm square of aluminum foil.
  6. Divide the prepared pineapple, apple, and apricot mixture evenly among the four foil squares.
  7. Pour the fruit juice evenly over the fruit in each parcel.
  8. Fold the foil over the fruit to create a sealed packet, crimping the edges tightly to prevent steam from escaping.
  9. Place the parcels on a baking sheet and bake for 25 minutes until the fruit is tender.
  10. Carefully open the hot parcels, allowing steam to escape, and serve warm directly from the foil.

Note

For a special occasion, substitute 15 ml (1 tbsp) of the fruit juice with Calvados or brandy for a deeper, richer flavor.

Ensure the foil packets are sealed tightly to steam the fruit in its own juices, keeping it moist and tender.

Cox's apples are recommended for their balance of sweetness and acidity, but any firm cooking apple will work.

Be careful when opening the parcels as hot steam will escape.
