Directions

  1. Preheat the oven to 400°F (200°C).
  2. In a small bowl, combine the whole wheat flour, all-purpose flour, and 1 tablespoon of sugar.
  3. Cut in the margarine using a pastry cutter or fork until the mixture resembles coarse crumbs.
  4. Sprinkle ice water over the flour mixture, tossing gently until the dough begins to clump together.
  5. Press the dough into a ball and flatten it into a circle on a sheet of waxed paper.
  6. Cover with another sheet of waxed paper and roll out into a 10-inch circle.
  7. Invert the rolled dough onto an ungreased baking sheet, removing the top sheet of waxed paper.
  8. Crimp the edges of the crust with your fingers or a fork and prick the bottom all over with a fork.
  9. Bake the crust for 12-15 minutes, or until lightly browned and firm. Remove from oven and let cool completely.
  10. While the crust bakes, make the glaze: In a small saucepan, whisk together the 2 teaspoons of sugar and cornstarch.
  11. Stir in the orange juice and cook over medium heat, stirring constantly, until the mixture thickens and becomes bubbly.
  12. Remove the glaze from heat and let it cool slightly until it reaches a pourable consistency.
  13. Transfer the cooled crust to a serving plate.
  14. Arrange the sliced kiwi in the center of the tart.
  15. Arrange the sliced bananas around the kiwi, followed by the sliced strawberries around the bananas.
  16. Spoon the orange glaze evenly over the fruit.
  17. Serve immediately, or chill for up to 1 hour before serving.
