Description

This traditional Greek-style pickle recipe combines crisp cucumbers, cauliflower, cabbage, carrots, and celery with robust garlic, mustard seeds, peppercorns, and bay leaves. The vegetables are layered in a large container and submerged in a hot salt brine, allowing them to ferment naturally over about ten days. The result is a crunchy, aromatic side dish with a complex tangy flavor and a subtle kick from the spices. Perfect for pairing with rich meats or enjoying as a refreshing snack, these pickles offer a homemade taste that surpasses store-bought varieties.

Directions

  1. Peel the garlic and cut each clove in half.
  2. Peel the carrots.
  3. Wash all vegetables thoroughly.
  4. Cut the cabbage, carrots, and celery into quarters.
  5. Break the cauliflower apart into florets, leaving a little of the leaves on for taste but discarding the hard part of the stem.
  6. With the cabbage, discard outer leaves and cut off the hard part at the base.
  7. Leave the cucumbers whole.
  8. Layer the vegetables in your container, mixing them so all of one kind is not next to the other.
  9. Alternate layers of vegetables with garlic cloves.
  10. Add 1 heaping tablespoon of salt for each liter of hot water that you will add to the barrel.
  11. Once the barrel is full with vegetables, add 5 more tablespoons of salt on top, along with 2 tablespoons of mustard seeds, 2 tablespoons of peppercorns, and 4 bay leaves.
  12. Pour hot water over the vegetables until they are completely submerged.
  13. Use clean wood sticks or empty glass bottles on top to hold down all vegetables under the water.
  14. Ensure the container closes securely.
  15. Mix the barrel by rolling it on the floor or shaking it vigorously to distribute the salt and spices.
  16. Shake or mix the barrel again each day for the next few days to ensure even fermentation.
  17. Taste the liquid after the first couple of days; add an additional tablespoon or two of salt if needed, but avoid adding too much at once.
  18. Allow the pickles to ferment for about 10 days, noting that Kirby cucumbers may take a few days longer.
