Garlic Eggplant (Grinberg)
Description
This comforting Garlic Eggplant dish features tender Japanese eggplants, earthy mushrooms, and sweet onions simmered until perfectly soft. The combination of fresh garlic and basil creates a rich, aromatic profile that is both simple and deeply satisfying. Ideal for a cozy dinner or a light lunch, this vegan-friendly recipe requires minimal ingredients but delivers maximum flavor. The eggplants absorb the savory juices, resulting in a moist and flavorful side dish or main course that pairs beautifully with rice or crusty bread.Ingredients
Directions
-
If using regular eggplant instead of Japanese, salt the cubes and let drain for a couple of hours, then rinse and pat dry.
-
In a large heavy-bottomed pan or Dutch oven, sauté the chopped onions in a small amount of water or vegetable stock over medium heat until soft and sweet.
-
Add the quartered mushrooms, cut eggplant, crushed garlic, and 1 cup of water to the pan.
-
Bring the mixture to a boil over medium-high heat, stirring occasionally, which should take about 2 minutes.
-
Reduce heat to low to maintain a simmer, cover, and cook for about 30 minutes, or until the eggplant is very soft and tender.
-
Stir in the dried or fresh basil, and season with salt and pepper to taste.
-
Serve warm. Reheat leftovers gently before serving.
