Gascony Lamb Casserole
Description
This hearty Gascony Lamb Casserole is a masterpiece of rustic French cooking, combining tender chunks of lamb with the smoky richness of pork belly and the umami depth of anchovy fillets. Slow-cooked in a robust red wine and chicken stock reduction, the meat becomes fall-apart tender, absorbing the complex flavors of the braise. The addition of dried cannellini beans provides a creamy texture that thickens the sauce naturally, creating a satisfying, one-pot meal. It is the perfect dish for a cozy winter evening or a special family dinner where you want to impress without excessive effort.Directions
-
Sort and rinse the dried cannellini beans. Place them in a large bowl and cover with plenty of cold water. Let them soak for at least 4 hours or overnight to rehydrate.
-
Preheat your oven to 325°F (160°C).
-
In a large Dutch oven or heavy-based casserole dish, heat the olive oil over medium-high heat.
-
Pat the lamb chunks and pork belly cubes dry with paper towels. Season lightly with salt and pepper.
-
Brown the pork belly pieces in the hot oil until golden and crisp. Remove with a slotted spoon and set aside.
-
In the same pot, brown the lamb chunks in batches to avoid crowding. Ensure all sides are seared. Remove and set aside with the pork.
-
Reduce heat to medium. Add the chopped Spanish onions to the pot. Sauté until softened and translucent, about 5 minutes.
-
Stir in the anchovy fillets, allowing them to melt and dissolve into the onion mixture, creating a savory base.
-
Return the lamb and pork belly to the pot. Pour in the red wine, scraping up any browned bits from the bottom of the pot.
-
Drain the soaked beans and add them to the pot. Add the chicken stock, ensuring the liquid mostly covers the ingredients.
-
Bring the mixture to a gentle simmer on the stovetop. Cover the pot with a tight-fitting lid.
-
Transfer the pot to the preheated oven. Braise for 2 to 2.5 hours, or until the lamb is tender and the beans are soft.
-
During the last 30 minutes of cooking, prepare the green vegetables. If using green beans, trim and cut them into bite-sized pieces. If using peas, shell them.
-
Remove the pot from the oven. Stir in the green vegetables. Cover and return to the oven for the remaining 15-20 minutes to cook the vegetables.
-
Taste and adjust seasoning with salt and pepper if needed. The anchovies usually provide enough saltiness, so be cautious.
-
Serve hot in deep bowls, accompanied by slices of warm olive ciabatta or French bread for dipping.
