  1. Preheat the oven to 325F (160C).
  2. Pat the lamb and pork belly dry with paper towels. Season generously with salt and pepper.
  3. Heat olive oil in a heavy-based casserole dish or Dutch oven over medium-high heat.
  4. Brown the lamb chunks in batches until golden on all sides. Remove and set aside.
  5. In the same pot, render the pork belly until crispy and golden. Remove and set aside with the lamb.
  6. Reduce heat to medium. Add the chopped onions to the pot and cook until softened and translucent, about 5 minutes.
  7. Add the minced garlic and cook for 1 minute until fragrant.
  8. Pour in the white wine to deglaze the pan, scraping up any browned bits from the bottom.
  9. Return the lamb and pork belly to the pot. Add the crushed tomatoes, drained cannellini beans, and stock.
  10. Bring the mixture to a simmer, then cover with a lid.
  11. Transfer the casserole to the preheated oven and cook for 2 to 2.5 hours, or until the lamb is tender and the sauce has thickened.
  12. Serve hot alongside slices of warm olive ciabatta bread.

Note

Make sure to soak the dried cannellini beans overnight in plenty of water, draining and rinsing them before adding to the casserole.
