Gf Pat’s Brown & White Rice Flour Breads
Description
This gluten-free bread combines brown and white rice flours to create a loaf with a tender crumb and light texture. Enriched with vegetable shortening and eggs, it offers a satisfying chew without the heaviness often found in GF baking. The simple yeast dough is perfect for slicing, toasting, or making sandwiches. It has a mild, nutty flavor that pairs beautifully with butter, jam, or savory spreads. Ideal for breakfast or as a side to soups and stews, this bread proves that gluten-free can be soft and delicious.Ingredients
Directions
-
In a small bowl, dissolve 2 teaspoons sugar in 1/2 cup wrist-warm water. Sprinkle the active dry yeast on top and let stand for 10 minutes until frothy.
-
In a saucepan, combine 1 1/4 cups water and vegetable shortening. Heat gently until the shortening is melted. Remove from heat and cool to lukewarm.
-
In the bowl of a stand mixer, combine the brown rice flour, white rice flour, 1/4 cup sugar, xanthan gum, and salt.
-
Pour the yeast mixture into the flour mixture. Blend on low speed until combined.
-
Pour in the warm shortening mixture. Mix well until incorporated.
-
Add the eggs to the bowl. Beat on high speed for 2 minutes until the dough is smooth and thick.
-
Cover the bowl and let the dough rise in a warm place until doubled in size, about 1 hour.
-
Preheat oven to 400F (200C). Grease two small bread pans or round loaf pans.
-
Pour the dough into the prepared pans, filling them about 3/4 full.
-
Let the dough rise again for about 30-45 minutes, or until it rises slightly above the rim of the pans.
-
Bake at 400F (204C) for 10 minutes.
-
Place a sheet of foil loosely over the tops of the loaves to prevent over-browning. Reduce heat to 350F (177C) if needed, and bake for an additional 40-50 minutes, or until the bread sounds hollow when tapped and an internal thermometer reads 200F (93C).
-
Remove the bread from the pans immediately and transfer to a wire rack to cool completely before slicing.
