Description

This gluten-free bread combines brown and white rice flours to create a loaf with a tender crumb and light texture. Enriched with vegetable shortening and eggs, it offers a satisfying chew without the heaviness often found in GF baking. The simple yeast dough is perfect for slicing, toasting, or making sandwiches. It has a mild, nutty flavor that pairs beautifully with butter, jam, or savory spreads. Ideal for breakfast or as a side to soups and stews, this bread proves that gluten-free can be soft and delicious.

Ingredients

Directions

  1. In a small bowl, dissolve 2 teaspoons sugar in 1/2 cup wrist-warm water. Sprinkle the active dry yeast on top and let stand for 10 minutes until frothy.
  2. In a saucepan, combine 1 1/4 cups water and vegetable shortening. Heat gently until the shortening is melted. Remove from heat and cool to lukewarm.
  3. In the bowl of a stand mixer, combine the brown rice flour, white rice flour, 1/4 cup sugar, xanthan gum, and salt.
  4. Pour the yeast mixture into the flour mixture. Blend on low speed until combined.
  5. Pour in the warm shortening mixture. Mix well until incorporated.
  6. Add the eggs to the bowl. Beat on high speed for 2 minutes until the dough is smooth and thick.
  7. Cover the bowl and let the dough rise in a warm place until doubled in size, about 1 hour.
  8. Preheat oven to 400F (200C). Grease two small bread pans or round loaf pans.
  9. Pour the dough into the prepared pans, filling them about 3/4 full.
  10. Let the dough rise again for about 30-45 minutes, or until it rises slightly above the rim of the pans.
  11. Bake at 400F (204C) for 10 minutes.
  12. Place a sheet of foil loosely over the tops of the loaves to prevent over-browning. Reduce heat to 350F (177C) if needed, and bake for an additional 40-50 minutes, or until the bread sounds hollow when tapped and an internal thermometer reads 200F (93C).
  13. Remove the bread from the pans immediately and transfer to a wire rack to cool completely before slicing.
