Ingredients

Directions

  1. Slit the shrimp up the back with a sharp knife and remove the vein, leaving the shells on. Pat the shrimp dry with paper towels.
  2. Heat olive oil in a wok or wide heavy skillet over high heat until the oil is rippling.
  3. Add the shrimp to the hot oil and stir-fry for 2 minutes. Drain the shrimp and set aside, reserving the oil in the pan.

  5. Add the ginger, garlic, and onions to the wok and stir-fry for 20 seconds until fragrant.
  6. Return the shrimp to the wok along with the aromatics. Season with salt and freshly ground pepper.

Note

Do not overcook the shrimp; they should be pink and just curled. Overcooking will make them tough and rubbery.

The original text included instructions for roasted garlic, stuffed mushrooms, and other dishes. These have been omitted as they are not part of the Ginger-Garlic Shrimp recipe.

For best results, use fresh ginger and garlic. Minced ginger and garlic from a jar can be used in a pinch but will lack the same intensity of flavor.

Serve with steamed rice, noodles, or crusty bread to soak up the flavorful oil.
