Description

This Glace Baklava is a luxurious twist on the traditional pastry, incorporating finely chopped candied fruits alongside toasted almonds for a vibrant burst of flavor. The delicate, buttery layers of phyllo dough become crisp and shatteringly light, contrasting beautifully with the chewy, sweet interior. Soaked in a fragrant syrup infused with cinnamon and lemon, every bite offers a perfect balance of sweetness and spice. It is an impressive centerpiece for holiday gatherings, festive celebrations, or as a sophisticated ending to a hearty meal. While it requires patience to assemble, the result is a timeless treat that feels both homemade and elegant.

Directions

  1. Preheat oven to 350°F (175°C).
  2. Prepare the syrup: In a saucepan, combine 3 cups sugar, 2 cups water, juice of 1/2 lemon, and 1 cinnamon stick. Bring to a boil, then reduce heat and simmer for 20 minutes. Remove from heat and let cool completely.
  3. Beat 4 eggs in a large bowl until light and fluffy.
  4. In a separate bowl, combine 1 1/2 cups sugar, 1 pound finely chopped blanched almonds, and 1 pound finely chopped mixed glacé fruit.
  5. Fold the almond and fruit mixture into the beaten eggs until well combined.
  6. Prepare the phyllo pastry: Keep unused sheets covered with a damp towel to prevent drying.
  7. Take 2 sheets of phyllo pastry. Brush one sheet with melted butter, then place the second sheet on top and brush with butter.
  8. Spread a band of the fruit-and-nut mixture, about 1 inch wide, along the long end of the phyllo sheets.
  9. Fold the short ends over the filling and roll tightly like a jelly roll.
  10. Place the roll on a baking sheet. Brush the top with melted butter.
  11. Using a sharp knife, make diagonal slits along the length of the roll, about 1 1/2 inches apart. Be careful not to cut all the way through to the bottom.
  12. Repeat the process with remaining phyllo and filling until all mixture is used, arranging rolls on baking sheets.
  13. Bake in the preheated oven for about 1 1/2 hours, or until the pastry is golden brown and crisp.
  14. While still hot, use a sharp knife to cut through the entire roll along the diagonal slits to separate the pieces.
  15. Immediately dip the hot baklava pieces into the cooled syrup, ensuring they are well coated.
  16. Drain excess syrup on a wire rack or paper towels before serving.
