Description

This hearty Grape Nuts bread is a comforting twist on classic quick breads, utilizing the crunchy cereal for texture and nutrition. The batter is enriched with a warm mixture of milk, honey, and butter, which softens the raisins and infuses the loaf with deep caramel notes. Dense and satisfying, it pairs beautifully with morning coffee or as a side to soups and stews. Its a perfect way to use up pantry staples while enjoying a wholesome, homemade treat.

Ingredients

Directions

  1. Preheat the oven to 350F (175C).
  2. Butter a 9x5x3 inch loaf pan, dust with the wheat germ, and set aside.
  3. In a medium saucepan, combine the raisins, milk, honey, sugar, and butter.
  4. Bring the mixture to a boil over moderate heat, stirring occasionally.
  5. Immediately pour the hot liquid over 1 1/2 cups of the Grape Nuts cereal in a large mixing bowl.
  6. Let the mixture cool for 15 minutes to soften the cereal and raisins.
  7. In a separate bowl, sift together the flours, baking powder, baking soda, and salt.
  8. Add the sifted dry ingredients to the cereal mixture.
  9. Stir in the remaining 1/2 cup of cereal, eggs, and vanilla extract.
  10. Mix with a heavy wooden spoon just until the batter is blended; do not overmix.
  11. Spoon the batter into the prepared loaf pan, smoothing the top with a spatula.
  12. Sprinkle the remaining Grape Nuts cereal over the top of the loaf.
  13. Bake for about 1 hour, or until the loaf shrinks slightly from the sides of the pan and a skewer inserted into the center comes out clean.
  14. Loosely cover the top with aluminum foil if it begins to brown too quickly during baking.
  15. Cool the loaf in the pan on a wire rack for 20 minutes.
  16. Carefully loosen the sides of the loaf, then invert onto the rack and turn right side up.
  17. Allow the bread to cool completely before slicing.

Note

Storage: Wrap cooled bread tightly in plastic wrap or aluminum foil and store at room temperature for up to 3 days. For longer storage, freeze slices individually.

Variation: For a vegan version, substitute the butter with coconut oil and the eggs with flax eggs (1 tbsp ground flaxseed mixed with 3 tbsp water per egg).

Tip: If you prefer a softer texture, you can soak the raisins in the warm milk mixture for an additional 10 minutes before adding the cereal.
