Grape Nuts Bread
Description
This hearty Grape Nuts bread is a comforting twist on classic quick breads, utilizing the crunchy cereal for texture and nutrition. The batter is enriched with a warm mixture of milk, honey, and butter, which softens the raisins and infuses the loaf with deep caramel notes. Dense and satisfying, it pairs beautifully with morning coffee or as a side to soups and stews. Its a perfect way to use up pantry staples while enjoying a wholesome, homemade treat.Ingredients
Directions
-
Preheat the oven to 350F (175C).
-
Butter a 9x5x3 inch loaf pan, dust with the wheat germ, and set aside.
-
In a medium saucepan, combine the raisins, milk, honey, sugar, and butter.
-
Bring the mixture to a boil over moderate heat, stirring occasionally.
-
Immediately pour the hot liquid over 1 1/2 cups of the Grape Nuts cereal in a large mixing bowl.
-
Let the mixture cool for 15 minutes to soften the cereal and raisins.
-
In a separate bowl, sift together the flours, baking powder, baking soda, and salt.
-
Add the sifted dry ingredients to the cereal mixture.
-
Stir in the remaining 1/2 cup of cereal, eggs, and vanilla extract.
-
Mix with a heavy wooden spoon just until the batter is blended; do not overmix.
-
Spoon the batter into the prepared loaf pan, smoothing the top with a spatula.
-
Sprinkle the remaining Grape Nuts cereal over the top of the loaf.
-
Bake for about 1 hour, or until the loaf shrinks slightly from the sides of the pan and a skewer inserted into the center comes out clean.
-
Loosely cover the top with aluminum foil if it begins to brown too quickly during baking.
-
Cool the loaf in the pan on a wire rack for 20 minutes.
-
Carefully loosen the sides of the loaf, then invert onto the rack and turn right side up.
-
Allow the bread to cool completely before slicing.

Note
Storage: Wrap cooled bread tightly in plastic wrap or aluminum foil and store at room temperature for up to 3 days. For longer storage, freeze slices individually.
Variation: For a vegan version, substitute the butter with coconut oil and the eggs with flax eggs (1 tbsp ground flaxseed mixed with 3 tbsp water per egg).
Tip: If you prefer a softer texture, you can soak the raisins in the warm milk mixture for an additional 10 minutes before adding the cereal.
