Description

This unique condiment blends savory minced beef with tart green tomatoes, apples, and warm spices like cinnamon, cloves, and ginger. The result is a complex, sweet-and-sour preserve with a tender texture that pairs beautifully with rich meats. Often served alongside roast beef or game, this versatile topping adds depth and brightness to hearty meals. It’s a nostalgic recipe that transforms simple pantry staples into a gourmet accompaniment, perfect for adding a tangy kick to your holiday table or everyday dinners.

Ingredients

Directions

  1. Place the cubed stew beef in a large pot and cover with water. Bring to a boil, then reduce heat and simmer until the meat is very tender.
  2. Drain the beef, reserving some of the cooking liquid if needed, and transfer it to a food processor or coarse food chopper.
  3. Add the suet, cored green tomatoes, and peeled tart apples to the chopper. Process everything together until finely minced.
  4. Transfer the minced mixture back to a large heavy-bottomed pot. Add the raisins, cinnamon, fruit juice, minced citron, orange rind, salt, cloves, allspice, ginger, nutmeg, and beef stock.
  5. Bring the mixture to a simmer over medium heat. Reduce heat to low and cook for 1 hour, stirring frequently to prevent sticking, until the mixture thickens significantly.
  6. While the mixture simmers, sterilize three 1-quart jars by heating them in an oven or boiling water bath. Keep them hot until ready to use.
  7. Ladle the hot minced meat mixture into the sterilized jars, filling them to the top.
  8. If using brandy, drizzle 2 tablespoons over the top of the mixture in each jar. Seal the jars tightly with sterilized lids.
