Directions
-
Place the cubed stew beef in a large pot and cover with water. Bring to a boil, then reduce heat and simmer until the meat is very tender.
-
Drain the beef, reserving some of the cooking liquid if needed, and transfer it to a food processor or coarse food chopper.
-
Add the suet, cored green tomatoes, and peeled tart apples to the chopper. Process everything together until finely minced.
-
Transfer the minced mixture back to a large heavy-bottomed pot. Add the raisins, cinnamon, fruit juice, minced citron, orange rind, salt, cloves, allspice, ginger, nutmeg, and beef stock.
-
Bring the mixture to a simmer over medium heat. Reduce heat to low and cook for 1 hour, stirring frequently to prevent sticking, until the mixture thickens significantly.
-
While the mixture simmers, sterilize three 1-quart jars by heating them in an oven or boiling water bath. Keep them hot until ready to use.
-
Ladle the hot minced meat mixture into the sterilized jars, filling them to the top.
-
If using brandy, drizzle 2 tablespoons over the top of the mixture in each jar. Seal the jars tightly with sterilized lids.
