or manchego cheese, thinly your choice of salsa, to
-
serve Molletes are on every single breakfast menu in Mexico and they are a perfect start to a vegetarian day.
-
In Mexico, we use crusty, white rolls, called bolillos or teleras, to make molletes.
-
They look enormous, but they are very light.
-
Any crusty white roll will do.
-
Molletes are not at all spicy, so you may want to spice them up a bit by topping with a simple red or green sauce (see pages 154 and 155).
-
Heat your grill to high.
-
Open out the sliced rolls and place them cut-sides upwards.
-
Smear a generous helping of beans on the cut sides.
-
Portion out the slices of cheese or scatter the grated cheese over the top.
-
Place the molletes on a baking tray and pop them under the
-
grill for about 3-5 minutes, or until the cheese has melted.
-
A simple, spicy red sauce, such as roasted red sauce (see page 154), goes well with molletes.
-
Dribble the salsa on and eat straight away.
-
In Mexico City, molletes are always served with pico de gallo (see page 156), as well as a spicy salsa of your choice
