Description

This American-style dish features red snapper marinated in a vibrant achiote paste made with annatto seeds, garlic, and spices. The fish is grilled until seared and served with a fresh, spicy citrus-habanero sauce. It offers a satisfying balance of heat and acidity, perfect for weeknight dinners or family gatherings.

Directions

  1. Prepare the Achiote Paste: Combine annatto seeds, garlic, oregano, peppercorns, cumin, coriander, allspice, and vinegar (or juice mixture) in a blender or food processor.
  2. Process with an on/off motion until thoroughly pureed.
  3. Add more orange juice or vinegar as needed to achieve a smooth paste consistency.
  4. Spread the Achiote Paste on both sides of the fish fillets, covering them well.
  5. Place the fish in the refrigerator for 1 to 2 hours to marinate.
  6. Prepare the Citrus-Habanero Sauce: In a mixing bowl, combine orange juice, lime juice, water, onion, habanero, cilantro, and salt to taste.
  7. Grill the fish over hot coals, skin-side down, until seared, about 2 minutes per side.
  8. Serve immediately with the Citrus-Habanero Sauce.
