Ingredients

Directions

  1. Prepare your campfire or grill until you have a bed of hot embers.
  2. Slice the onions, green pepper, and all carrots into thick chunks.
  3. Cut the leftover turkey into bite-sized pieces.
  4. Clean and pat dry the trout, leaving heads on if desired.
  5. Lay out four large sheets of heavy-duty aluminum foil.
  6. Divide the sliced onions, peppers, and carrots evenly among the foil sheets.
  7. Top the vegetables with the turkey chunks.
  8. Place one trout on top of the turkey and vegetable mixture on each foil sheet.
  9. Dot each fish with 1 tablespoon of butter or margarine.
  10. Season generously with salt, pepper, and garlic salt.
  11. Sprinkle 1 teaspoon of water over each packet to create steam.
  12. Fold the foil tightly over the ingredients to create a sealed packet, adding a second layer if cooking directly in coals.
  13. Place the packets directly on the hot embers or grill grate.
  14. Cook for about 15-20 minutes, turning once halfway through, until the fish is opaque and flakes easily.
  15. Carefully open the foil (watch for steam) and serve immediately.

Note

Use heavy-duty aluminum foil to prevent tearing. If using standard foil, double it up for extra strength.

Dark turkey meat is recommended for better flavor and moisture retention, but light meat works well too.

Be careful when opening the foil packets as hot steam will escape. Open away from your face.
