Description

This vibrant dish features tender lamb rump skewers marinated in a sweet and savory blend of honey, mustard, and garlic, then grilled to perfection. The smoky char from the grill complements the rich meat beautifully. It is served alongside a cooling dip made from Greek-style yoghurt, finely chopped cucumber, fresh mint, and lemon juice. The combination of hot, juicy lamb and cold, creamy dip creates a perfect balance of textures and temperatures. Ideal for summer barbecues or as an elegant appetizer for dinner parties, this recipe brings bold flavors and simple elegance to your table.

Ingredients

Directions

  1. In a mortar and pestle, pound the 2 chopped garlic cloves, ground black pepper, and dried chilli flakes to form a coarse paste.
  2. Transfer the paste to a bowl and stir in 2 tablespoons of honey, 1 tablespoon of olive oil, and the wholegrain mustard until well combined.
  3. Thread the lamb pieces onto the soaked bamboo skewers and arrange them on a tray.
  4. Brush the lamb skewers generously with the honey-mustard marinade, covering all sides.
  5. Cover the tray with plastic wrap and refrigerate for 30 minutes to allow the lamb to marinate.
  6. While the lamb marinates, combine the yoghurt, finely chopped cucumber, lemon juice, and the remaining crushed garlic in a serving bowl.
  7. Season the yoghurt dip with salt and pepper to taste, then cover and chill until ready to serve.
  8. Heat a char-grill pan over moderately high heat until smoking.
  9. Brush the grill pan with the extra tablespoon of olive oil, then add the lamb skewers.
  10. Cook the skewers for 6 minutes, turning occasionally, until charred on the outside and cooked to your liking (medium is recommended).
  11. Transfer the cooked skewers to a heatproof plate, cover loosely with foil, and let them rest for 5 minutes.
  12. Sprinkle the chopped fresh mint over the yoghurt dip and stir gently.
  13. Drizzle the lamb skewers with the remaining tablespoon of honey before serving.
  14. Serve the grilled lamb skewers alongside the cucumber yoghurt dip and lemon wedges.

Note

Soak bamboo skewers in water for at least 30 minutes before use to prevent them from burning on the grill.

The yoghurt dip can be prepared up to a day in advance; store covered in the refrigerator.

For a spicier kick, increase the amount of dried chilli flakes in the marinade.

If you cannot find Lebanese cucumber, regular cucumber works well but ensure you remove the seeds to avoid excess moisture in the dip.
