The preparation is straightforward, allowing the high-quality ingredients to shine. Serve alongside rice, quinoa, or a fresh green salad for a complete and satisfying meal that brings fresh, home-style flavors to your table.

Ingredients

Directions

  1. In a small bowl, cream the softened butter until smooth.
  2. Grate 1/2 teaspoon of zest from the lime and squeeze 1 1/2 teaspoons of lime juice.
  3. Beat the lime zest and juice into the creamed butter.
  4. Peel and mince the shallot, then stir it into the butter mixture.
  5. Stir in the minced cilantro, 1/4 teaspoon salt, 1/4 teaspoon pepper, and cayenne pepper.
  6. Transfer the mixture to a sheet of plastic wrap and roll into a 1-inch log. Set aside.
  7. Remove the top two-thirds of each chicken wing, leaving the segment nearest the breast meat attached.
  8. Cut off the knobby wing joints and scrape around the bones.
  9. Sprinkle the chicken breasts with 1 teaspoon salt and 1/2 teaspoon pepper.
  10. Squeeze 2 tablespoons of fresh lime juice into a nonreactive baking dish.
  11. Stir in olive oil and cilantro, then turn the chicken breasts to coat each side in the marinade.
  12. Set the chicken aside at room temperature for 2 hours, or cover and refrigerate overnight.
  13. If the cilantro-lime butter has been refrigerated, allow it to come to room temperature.
  14. Heat a grill, or adjust oven rack to the high position and preheat the broiler.
  15. Grill or broil the chicken breasts until the juices run clear when pierced in the thickest part, turning once, for about 7 to 8 minutes per side.
  16. Transfer the cooked chicken breasts to warm dinner plates and top each with a tablespoon of the herb butter.
