Description

This vibrant dish features firm Mahi Mahi fillets marinated in a zesty blend of pineapple juice, soy sauce, sesame oil, and fresh ginger. The sweet and tangy marinade penetrates the fish, creating a flavorful crust when grilled alongside thick slices of fresh pineapple. The result is a perfect balance of savory, sweet, and a gentle kick of heat from crushed red pepper. The pineapple caramelizes on the grill, adding a juicy, tropical contrast to the flaky white fish. Its an easy weeknight dinner that feels special enough for guests, offering a healthy yet satisfying meal with minimal cleanup. Serve with rice or a light salad for a complete tropical-inspired feast.

Ingredients

Directions

  1. In a small bowl, whisk together pineapple juice, soy sauce, sesame oil, grated ginger, chopped garlic, crushed red pepper, and chopped green onions to make the marinade.
  2. Pour 1 cup of the marinade into a shallow nonmetal dish or heavy-duty resealable plastic bag; reserve the remaining marinade for basting and refrigerate.
  3. Cut the Mahi Mahi fillets into 4 even serving pieces and place them in the dish or bag with the 1 cup of marinade.
  4. Cover the dish or seal the bag, ensuring the fish is coated, and refrigerate for at least 2 hours (up to 12 hours), turning once halfway through.
  5. Preheat your grill to medium heat and generously spray the grill rack with nonstick cooking spray.
  6. Remove the fish from the marinade, letting excess drip off, and discard the used marinade.
  7. Place the fish fillets and pineapple slices on the grill rack, about 4 inches from the heat source.
  8. Grill for 8 to 12 minutes, turning once halfway through and brushing frequently with the reserved marinade.
  9. Cook until the fish flakes easily with a fork and the pineapple is golden brown with grill marks.
  10. Serve the fish and pineapple immediately.
