Harrod’s Christmas Pudding
Description
This classic British Christmas pudding is a dense, moist dessert loaded with golden raisins, currants, and raisins. The batter combines fresh bread crumbs, self-rising flour, and a blend of warm spices like cinnamon, nutmeg, and apple pie spice. Zest from fresh lemon and orange adds a bright aromatic lift to the deep sweetness of dark brown sugar and corn syrup. Traditionally steamed for hours to meld the flavors, this version offers a quicker approach while retaining that comforting, indulgent texture. Serve warm with brandy butter or custard for a festive holiday finish that captures the essence of a traditional British celebration.Ingredients
Directions
-
Preheat your oven to 350°F (175°C) if baking, or prepare a large pot for steaming by filling it with boiling water.
-
Grease two individual pudding molds or one large mold with butter.
-
In a large mixing bowl, combine the fresh bread crumbs, golden raisins, raisins, and currants.
-
Add the dark brown sugar, self-rising flour, salt, ground cinnamon, nutmeg, and apple pie spice to the fruit mixture.
-
In a separate bowl, beat the eggs until frothy, then mix in the melted unsalted butter, dark corn syrup, lemon juice, orange rind, and lemon rind.
-
Pour the wet ingredients over the dry ingredients and stir thoroughly until all components are evenly moistened and combined.
-
If using, stir in the brandy or rum at this stage for added flavor and moisture.
-
Divide the mixture evenly between the prepared molds, pressing it down firmly to eliminate air pockets.
-
Cover the top of each mold with a circle of parchment paper and a circle of aluminum foil, tied securely with string.
-
If steaming, place the molds in the prepared pot ensuring the water level reaches halfway up the sides of the molds.
-
Cover the pot and steam gently for 2 to 2.5 hours, checking periodically to ensure the water does not boil over and adding more boiling water if needed.
-
If baking instead, place molds in a roasting pan with hot water halfway up the sides and bake for 1.5 hours.
-
Remove from heat and let cool for 10 minutes before unmolding onto serving plates.
-
Serve warm with brandy butter, custard, or cream.
