Description

This Herbed Biscuit Egg Bake is a comforting, rustic dish perfect for weekend brunches or lazy Sunday mornings. It features a tender, aromatic biscuit crust infused with thyme, rosemary, and garlic, which cups a rich mixture of eggs, sauted onions, and tender broccoli. The whole dish is baked until golden and set, then topped with melted cheddar cheese for a satisfying finish. Its essentially a deconstructed quiche with a homemade biscuit base, offering a delightful contrast between the flaky crust and the custardy interior. Simple to assemble with pantry staples, its a hearty, homemade meal that tastes just like comfort food.

Ingredients

Directions

  1. Preheat your oven to 400F (200C).
  2. In a large bowl, sift together the flour, baking powder, and salt.
  3. Stir in the dried thyme, dried rosemary, garlic powder, and lemon pepper.
  4. Cut the shortening into the flour mixture using a pastry blender or two knives until it resembles coarse cornmeal.
  5. Make a well in the center and pour in 1/2 cup of milk.
  6. Mix lightly with a fork, adding just enough additional milk to form a soft dough that clings together.
  7. Turn the dough out onto a floured surface and knead gently just until it comes together.
  8. Press the biscuit dough evenly into the bottom and up the sides of an 8x8 inch baking dish.
  9. Saut the chopped onion in a skillet over medium heat until softened, about 5 minutes.
  10. Spread the cooked onions evenly over the biscuit crust in the pan.
  11. In a separate bowl, whisk together the eggs, tarragon, thyme, garlic powder, lemon pepper, and salt.
  12. Pour the egg mixture into the crust over the onions.
  13. Scatter the lightly steamed broccoli florets evenly over the egg mixture.
  14. Sprinkle the grated cheddar cheese over the top.
  15. Bake for 35-40 minutes, or until the biscuit crust is golden brown and the egg filling is set.
  16. Let cool for 5 minutes before slicing and serving.
