Description

These vibrant herbal jellies offer a refreshing burst of flavor that elevates any meal. Whether you choose the classic coolness of mint or the earthy depth of sage, basil, or tarragon, these jellies are a culinary delight. They feature a delicate balance of sweet, tart, and herbal notes, creating a sophisticated accompaniment to rich foods. Ideal for holiday tables, charcuterie boards, or as a unique gift, this recipe is simple enough for beginners yet impressive for entertaining. The process involves steeping fresh herbs to extract their essence, resulting in a beautiful, clear jelly that adds both color and complexity to your table. Serve them alongside roasted meats, sharp cheeses, or even as a glaze for desserts.

Ingredients

Directions

  1. Place the finely chopped fresh herbs into a heat-resistant glass bowl.
  2. Pour 1 cup of boiling water over the herbs to steep.
  3. Cover the bowl and let the herbs stand for 30 minutes to extract the flavor.
  4. Strain the liquid through cheesecloth into a measuring cup, pressing on the herbs to extract all liquid.
  5. Add enough additional water to the strained liquid to make exactly 1 cup.
  6. In a heavy saucepan, combine the 1 cup of herb-infused water, 3 cups of sugar, 1/2 cup of cider vinegar, and 1 teaspoon of fresh lemon juice.
  7. Bring the mixture to a rolling boil over high heat, stirring frequently until the sugar is dissolved.
  8. Stir in the 3 oz of liquid pectin and bring back to a full rolling boil that cannot be stirred down, boiling hard for exactly 1 minute.
  9. Remove from heat and skim off any foam. Add green food coloring if desired for enhanced color.
  10. Ladle the hot jelly immediately into sterilized jars, leaving 1/4 inch headspace.
  11. Wipe rims clean, adjust lids, and process in a boiling water bath for 10 minutes if canning for long-term storage, or refrigerate for immediate use.

Note

Garnish with fresh herb sprigs if serving immediately.

Herb jellies are primarily used as accompaniments. For best results, ensure jars are properly sterilized before filling to prevent spoilage.

You can substitute mint with other herbs like sage, basil, tarragon, or marjoram for different flavor profiles. Sage pairs excellently with pork, while mint is classic with lamb.
