Description

This homemade haggis captures the authentic taste of Scotland with a rich, savory blend of lamb, liver, and hearty oats. Seasoned with warming spices like ginger, cloves, and nutmeg, it offers a dense, satisfying texture that is perfect for Burns Night suppers or cozy winter dinners. The combination of meat and grains creates a deeply flavorful dish that pairs beautifully with neeps and tatties. While traditionally cooked in a stomach casing, this loaf-pan version makes it accessible for home cooks while preserving the classic taste profile.

Ingredients

Directions

  1. Preheat oven to 350&# 194;°F (175ðC).
  2. Grease an 8.5-by 4.5-inch loaf pan with butter or oil.
  3. Coarsely chop the small onion.
  4. Place half of the boneless lamb shoulder, lamb liver, water, chopped onion, egg, salt, pepper, sugar, ginger, cloves, and nutmeg into a food processor fitted with a chopping blade.
  5. Process the mixture until well combined and relatively smooth.
  6. Add the remaining half of the lamb shoulder and the old-fashioned rolled oats to the processor.
  7. Pulse or process briefly just until the oats are incorporated and the mixture is uniform.
  8. Spoon the lamb mixture into the prepared loaf pan.
  9. Pat the surface down firmly to level and compact the mixture.
  10. Bake for 45 to 55 minutes, or until the center feels firm when gently pressed with a finger.
  11. Allow the haggis to cool in the pan for 5 minutes.
  12. Unmold onto a serving platter by inverting the pan.
  13. Slice and serve warm.
