Ingredients

Directions

  1. Heat vegetable oil in a large Dutch oven or heavy-bottomed pot over medium heat.
  2. Add chopped onions, green bell pepper, garlic, and half of the chopped parsley. Sauté for about 10 minutes, stirring occasionally, until vegetables are softened and translucent.
  3. Add the sliced smoked sausage (and salt pork if using) to the pot. Cook for another 5 minutes to brown the sausage slightly and render some fat.
  4. Stir in the boiled black-eyed peas and pour in the chicken broth. Bring the mixture to a rolling boil.
  5. Add the uncooked rice and stir well to combine. Return the mixture to a boil.
  6. Cover the pot tightly with a lid and reduce heat to low. Simmer for about 45 minutes. Do not lift the lid during this time to ensure even cooking.
  7. After 45 minutes, remove from heat. Season with salt and freshly ground pepper to taste.
  8. Stir in the remaining chopped parsley and the chopped green onions. Mix well.
  9. Let the dish stand, covered, for 5-10 minutes to allow the rice to finish steaming and flavors to meld before serving.
