Description

This elegant yet comforting dish features tender chicken breasts stuffed with a savory mixture of wild rice, saut&# 195;©ed mushrooms, onions, and crisp bacon. The earthy notes of thyme and garlic pair beautifully with the richness of butter and sherry, creating a robust flavor profile that feels special without being overly complicated. Wrapped in bacon and baked until golden, the chicken stays juicy while the filling absorbs all the delicious juices. Perfect for date nights, holiday gatherings, or when you want to elevate a weeknight dinner, this recipe delivers a restaurant-quality experience at home. The contrast between the crispy bacon exterior and the soft, flavorful stuffing makes every bite satisfying.

Ingredients

Directions

  1. Cook the wild rice mix with water and 1 tablespoon of butter in a small saucepan. Bring to a boil, then reduce heat and simmer for 20-25 minutes until rice is tender. Drain any excess water and set aside to cool slightly.
  2. In a skillet, cook 4 slices of bacon until crisp. Remove from skillet and chop coarsely. Reserve the bacon fat or add a bit more butter if needed for sautéing.
  3. Pound the 4 chicken breasts with a meat mallet to an even thickness, about 1/2 inch thick. This ensures even cooking and makes stuffing easier.
  4. In the same skillet used for bacon (or a clean one), melt enough butter to coat the pan. Add sliced mushrooms, diced onions, minced garlic, and thyme. Sauté over medium-high heat for about 5 minutes until vegetables are golden and tender.
  5. Stir in 2 tablespoons of sherry and cook for 1 minute until mostly evaporated. Add the cooked wild rice and chopped bacon. Mix in 2 tablespoons of sliced chives. Stir well to combine the stuffing mixture.
  6. Divide the stuffing mixture evenly among the 4 chicken breasts. Place the filling in the center of each breast and fold the sides over to seal. Use toothpicks if necessary to hold the shape.
  7. Place the stuffed chicken breasts in a baking dish, seam side down. Brush the top with melted butter or oil.
  8. Cut 4 additional slices of raw bacon in half lengthwise. Place two half-slices in a crisscross pattern over each chicken breast to secure the stuffing and add flavor.
  9. Sprinkle lightly with dried thyme. Bake in a preheated oven at 375ðF (190ðC) for 25-30 minutes, or until the chicken is cooked through (internal temperature of 165ðF) and the bacon is crisp.

Note

For best results, pound the chicken breasts to a uniform thickness to ensure even cooking.

If the stuffing is too loose to hold its shape, let it cool completely before stuffing the chicken, or add a little more cooked rice.

Use toothpicks to secure the stuffed chicken if needed, but remember to remove them before serving.

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently in the oven to maintain texture.

Sherry can be substituted with dry white wine or chicken broth if preferred.
