Ingredients

Directions

  1. Slice the mushrooms and sauté them in 2 tablespoons of butter over medium heat until browned and tender.
  2. Remove the cooked mushrooms from the pan and set aside.
  3. In the same pan, lightly sauté the finely chopped onion in a little butter until softened and translucent.
  4. Transfer the onion mixture to a large pot and add the water and reserved clam liquor. Bring to a boil.
  5. Add the peeled and finely chopped potatoes to the boiling liquid. Cover and simmer until the potatoes are tender.
  6. While the potatoes cook, cube the cream cheese into small pieces to help it melt smoothly.
  7. Once the potatoes are done, add the cubed cream cheese, sautéed mushrooms, and clams (with their juices) to the pot.
  8. Stir gently over low heat until the cream cheese has completely melted and incorporated into the broth.
  9. Pour in the whole milk (or half-and-half) and stir to combine.
  10. Heat the chowder gently until warmed through, but do not allow it to boil to prevent curdling.
  11. Just before serving, melt the remaining 1/4 cup of butter and stir it into the chowder for extra richness.
